Crab Stuffed Avocado

The other night I walked into the grocery store needing groceries. Actually needing, I'm not sure I'd been in 2014 and my pickings were down to nonexistent. The first thing when I walked in was avocados on sale 10/$10! I googled avocado recipes and found one I believed I could manipulate into something I wanted to eat! I picked up a ton of groceries (knowing full well I would not be able to make it up my 3 flights of stairs in only two trips... because that's my self required maximum) and headed home ready to cook!

I called my professional chopper over (Duck Dude) and we had this recipe whipped up in a matter of 10 minutes. I believe one person could easily accomplish the recipe in 20 minutes!

 

Our avocados came out of the oven, Duck Dude took one bite and declared it "his favorite recipe ever!!!" But he actually said, "I can taste every ingredient!" and he's already asked to make it again. I'm not gonna lie... my taste buds did love every single bite. But I'm not sure where you can really go wrong with avocados, cream cheese, and cayenne pepper. 

 


We ate our avocados with asparagus and mangos and had a healthy, gluten free dinner that I immediately made my entire family jealous of! 

I wrote the recipe for (serves 2) but I could/and would easily just up the number of avocados and ingredients if I were going to serve it to more people. I assume this recipe is not one that would keep overnight, but I would not know... because we did not have an ounce of leftovers. Enjoy!!

  4. Yes, you should all make them!! I'm pretty sure it's going to make its way up into my top 5 recipes! Also, I just realized I forgot to mention I baked them in a muffin pan! That way the avocados did not roll around. It worked really well!
